LEMON BALM

Melissa officinalis

Perennial, very branched plant about 70 cm high, with erect and hairy stems, oval leaves and pink flowers gathered in axillary tops. Very pleasant smell and sweet taste. The leaf is used as a condiment. Also in the manufacture of perfumes and liquors. Harvesting is done by cutting the stems before flowering.
